2 “recipes” in one post!?

Boy, what an unexpectedly good morning!

Sleeping last night didn’t go all that well. My big, orange, dumb, boy cat decided to lay on my head, scratch stuff, and just be generally annoying all night. I finally gave in and woke up, right has he actually settled and slept near me. I skipped a weigh in, and today it was time to face the consequences of my break from running/mega splurge Wednesday-Saturday of last week. I stepped on the scale, and what’s that… I GAINED LESS THAN 2 POUNDS! I am thrilled, and not even back to where I was after vacation!

After my weigh in I had to head to my mom’s house to feed her cat, getting a quick short walk in before breakfast. As soon as I got home I mixed up some Kodiak Cakes pancake and waffle mix to make a pumpkin waffle. It came out beautifully.  All I did was mix together:
-3/8 cup of mix (1/3 always seems like too little, and 1/2 seems like too much)
-2 tbsp pumpkin puree
-3/8 cup water
-Little less than 1/2 tsp cinnamon and pumpkin pie spice
-1/2 tbsp mini morsel chocolate chips (I couldn’t resist)

I poured everything into my waffle iron, a few dishes washed and I was ready to take it out! I poured 2 tbsp sugar-free maple syrup on mine, and had some black grapes on the side.

I sat on the computer for a while to finish my coffee and procrastinate my 2 Focus T25 workouts that I had to do in order to complete this week (all out of order and wonky). I first did Total Body Circuit. It was ROUGH but I think I stuck in there pretty well. I almost decided to not do the second workout, but I pulled through! I did a lot of modifications but still managed to get through. I started just yesterday and have completed pretty much the whole weeks worth of runs and workouts, so tomorrow I may still be taking off, so I don’t get overwhelmed getting ready tomorrow morning.

I rewarded myself with a bowl of greek yogurt! I’ve decided that once my current pre-flavored yogurts are gone I will be using plain and flavoring myself. Today I added: 4 drops of french vanilla stevia extract, 1 tbsp chia seeds, blueberries and 1/2 of a banana. Yum! I am excited to try more flavors!

I showered and got ready, and headed out to get some errands done. My first stop was a resale shop where I picked up a curling iron and air popcorn popper. Next up was picking up a card for the wedding we are going to tomorrow. Lastly, I stopped at JCPenney’s and ended up getting a necklace set and some running leggings for only $15! I love discounts.

I got home and once again needed lunch and it was getting late! I made a quick turkey sandwich with sriracha, lettuce, spinach, and provolone. On the side I had cucumber with more sriracha, and some pinto bean cheddar chips! This is the first regular loaf of bread I’ve bought in forever, since I was eating light low carb bread made of who knows what for so long. This was delicious and super filling.

I fed my mom’s cat again, and after seeing the leftover cupcakes from the other night needed something to snack on. When I got home I had an apple. Afterwards I relaxed and got pretty lazy while Tony was on his way home.

He finally got home and we hung out for awhile until I decided to start dinner. I made my own weird version of a vodka sauce on rigatoni with sausages, mushrooms, spinach, and zucchini. I eyeballed some of the ingredients, but either way, here’s the “recipe” for just 2 servings:

– 5oz Whole wheat rigatoni pasta
– cooking spray, I use olive oil
– 1 medium zucchini, cut into half moons
– 2 medium mushrooms, chopped
– 3 links pre-cooked chicken sausage, sliced
For the Sauce:
– 1/2 a yellow onion, chopped
– 1 1/2 tsp of minced garlic
– about a handful of baby spinach
– 1 cup red pasta sauce
– 2 tbsp plain greek yogurt
– 1 splash of vodka (I really don’t know if this did anything at all)
– cooking spray, I use olive oil
– 1 medium zucchini, cut into half moons
– 2 medium mushrooms, chopped

Start water to boil while I preparing vegetables. Once to a boil, add pasta, stirring regularly. Cook until preferred tenderness, drain, and set aside.

Next pour sauce into a saucepan and added the onions, spinach, garlic, and vodka and heat on medium covered.

Spray a nonstick skillet with cooking spray and add zucchini and mushrooms.

While everything is cooking add greek yogurt into the sauce and stir well. Replace cover.

Once zucchini is soft, add sausages to pan and cook until heated through.

Plate noodles, then top with sauce and veggie/sausage mix! Voila!

I’m pretty happy with how it all turned out, though I might try to spice up the sauce a bit next time.

After dinner we set off on a walk. We didn’t have anywhere set in mind, but ended up walking to the grocery store and getting a mixed 6 pack of beer to share. REAL healthy, I know. At least we walked 2 miles in the process. We got back home, he started his game up and I painted my nails. I don’t think that could be anymore gender typical.

We ended up drinking and having ice cream. Not tragic. I really have learned that I can’t manage the stress of strictly being tied down to a diet CONSTANTLY. I am so happy with the lifestyle changes I’ve made, and how different everything is now.

Lots to do tomorrow, so I will be blogging sometime after the weekend. Let’s see if I can manage to not have another blow out! My willpower isn’t what it used to be!
